We went into this place without realizing the hype from its numerous accolades and celebrity faved restaurant but our experience definitely lived up to the hype. Their banchans were laid out so lovely and tasted like my mom made them. The braised cod was nothing like I've ever tasted from trying other restaurants, from the soft silkiness of the meat to the slightly spicy, sweet and elegant sauce that no matter how hard I try to replicate, cannot be done. Would come back from Seattle to eat again 10/10

Went on a recent Sunday for lunch. Made reservations via Resy (on the restaurant's website) ... when we walked in, we were kindly greeted and shown to a table somewhat in the corner. It's a fairly small place, maybe 7-8 tables...there were 2 other customers having their meal, but mostly it was empty so I became a little skeptical and suspicious as we drove about an hour to get there. We regularly enjoy Korean tofu soup but we wanted try to something new and expand our K-food knowledge base. This is not a KBBQ place. They have a nice menu that includes: bibimbap, tofu soup...as well as their signature dishes: raw marinated crab and galbi jim. Since we are Soban "virgins", we thought to start with their specialty items and then perhaps return at a later time to try other things. We opted for seafood pancakes, spicy stir-fried octopus and their venerable galbi jim. Spoiler alert: we loved everything...from the warm and gracious service (an older lady was handling the entire dining room, we believe she may have been the owner), the delicious and satisfying meal, the colorful and homemade banchans (we counted 12!). We also noticed that items are brought out to your table at the same time, rather than one-by-one so the wait may be slightly longer. Seafood pancakes had a very satisfying outer crunch and soft, pillowy interior bite. The sauce that accompanied it seemed very salty (and I love salty foods)...so we used a bit of the sauce from the spicy octopus dish. The octopus dish was one of the best! Great texture...not too firm...def not overcooked...had a nice spice-level...I want more of this! Galbi jim was a first for us . We've seen it offered at several Korean restaurants, usually at a $30+ price point and have been curious but never took the plunge...until Soban! Although we have nothing to compare it to (bc it was our first time trying it)...I must say we totally enjoyed it. The flavors profile was very "light" where you could still taste the beef and vegetables...they also have a spicy version, which we may consider on a return visit. Overall, I hope to return to Soban to try some of their other dishes and banchan (apparently this changes regularly). We really appreciated the experience and warm family-like atmosphere. Yes, prices may be more than other places but it is definitely worth it!

The service was so good! Our server was very proactive in asking us if we need refills on the banchan, tea and extra rice for the crab after I finished mine. The variety of banchan was vast, and our crab had so much roe! Very well worth it.
